The Brownies You’ve Been Waiting For
Brownies have always been one of my favorite desserts, right up there with homemade ice cream! So when it came to creating an oat flour brownie recipe, it brought out all of my perfectionist tendencies.
I wanted brownies that were extra fudgy but still held together well, packed with rich flavor, super easy to make, and of course, used only my favorite healthier ingredients.
After months of testing (which my family did not mind one bit), I’m so excited to finally share these oat flour brownies with you! They have the classic brownie flavor and fudgy texture and come together in just one bowl. I hope you love them as much as I do!

Step-By-Step Instructions

Step 1: First, in a large mixing bowl, whisk together the dry ingredients: oat flour, cocoa powder, tapioca starch, and salt.

Step 2: Then gently stir in the coconut sugar, melted butter, eggs, avocado oil, and vanilla until just combined. Fold in 1/2 cup of the chocolate chips.
Cover and place in the fridge to rest for 30 minutes.

Step 3: Preheat oven to 350 degrees and line an 8″x8″ glass baking dish with parchment paper.
Evenly spread the brownie batter into the pan and sprinkle the remaining chocolate chips on top.

Step 4: Finally, bake for 25-30 minutes or until it’s mostly set but not yet completely firm to the center.
Let cool completely before removing from the pan and slicing. Enjoy!

Tips for the Best Oat Flour Brownies
Weigh the oat flour – The amount of oat flour in a standard cup measurement can vary significantly, so I recommend weighing it for best results. If you don’t have a kitchen scales, you can gently scoop the flour into a cup with a spoon and use a knife to level off the top.
Stir the batter gently – To avoid the brownies rising and then collapsing, the batter should have as little air mixed in as possible.
Don’t rush the resting time – Allowing the batter to rest for 30 minutes gives the oat flour time to soak up additional moisture and creates a smoother texture.
Don’t over-bake – For the best fudgy texture, when you pull the brownies out of the oven, they should still look slightly gooey in the center. They’ll firm up as they cool.
In my tests, 28 minutes is the perfect amount of baking time, but this can vary from oven to oven. I prefer airing on the side of under-baking rather than over-baking.
Cool completely before slicing – Since these are gluten-free, they tend to break apart easier if they’re sliced while still warm.

Brownies with the best crackly tops call for refined sugar and include additional steps. I created this recipe with coconut sugar, and I wanted to simplify the steps so it could be mixed in one bowl.
It’s normal for homemade brownies to sink slightly, but significant sinking is due to too much air being whipped into the batter. To prevent this, gently stir the wet ingredients into the batter with a spatula until everything is just combined. Make sure to never whisk or beat it!
This is usually caused by using too much flour and/or mixing the batter too long. To ensure the correct amount of flour, I recommend weighing it. When stirring the batter, gently stir until it’s just combined.
