Rice pudding has always been one of my favorite comfort foods, but white rice is just not that nutritious. For the past few years quinoa has been my favorite rice alternative, so I decided to try quinoa pudding.

It turned out delicious and is now one of my favorite ways to use up leftover quinoa!

Leftover quinoa pudding has a delicious, creamy texture similar to rice pudding and a hearty, slightly sweet flavor. It makes a wonderful breakfast or snack!

Why is Quinoa So Good?

Quinoa is a delicious and nourishing whole grain that makes a wonderful pudding!

High in protein – Quinoa is a complete protein and one cup (cooked) contains 8 grams of protein.

Good source of vitamins & minerals – It’s one of the most nutrient-dense grains you can eat.

Full of fiber – Eating quinoa is a great way to make sure you’re getting enough fiber in your diet!

Mild flavor – While it has a heartier flavor than white rice, properly prepared quinoa has a mild, neutral flavor that works well in numerous dishes. If the quinoa you’ve eaten tastes bitter, chances are it wasn’t rinsed or soaked.

Gluten free – Quinoa is naturally gluten-free, so most people can enjoy it.

Widely available – Some of the healthiest grains are harder to source, but not quinoa! You can easily find it at most grocery stores.

How to Serve Leftover Quinoa Pudding

Quinoa pudding has a creamy, slightly sweet flavor, and it is delicious served with various toppings! Here are some of my favorite toppings for quinoa pudding.

  • Dried cranberries (my personal favorite)
  • Raisins
  • Cinnamon
  • Extra maple syrup or honey
  • Fresh or dried fruit
  • Nuts
  • Whipped cream (you’ve got to try homemade whipped cream in a food processor!)
  • Chocolate chips
  • Fruit sauce
  • Jam
  • Cream

How to Store Quinoa Pudding

Store quinoa pudding in an airtight container in the fridge.

You can eat it cold or warm it up in the oven or on low heat on the stove. After warming it up, you may need to add a little extra milk or cream.

Cooked quinoa keeps up to 5 days in the fridge. Since this recipe is made with leftover quinoa, it will last about 5 days from when you first cooked the quinoa.

Ingredients for Leftover Quinoa Pudding

Cooked quinoa – This is a great way to use up leftover quinoa! For the best quinoa pudding, use cooked soaked quinoa.

Milk – Dairy or nondairy will work. For the best flavor, use whole dairy milk or full fat coconut milk.

Egg – Adds richness to the flavor and improves the texture.

Maple syrup – Delicious natural sweetener and can handle cooking heat.

Vanilla extract

Spices – Choose quality spices for the best flavor and health benefits. Mountain Rose Herbs is my favorite affordable source for organic, premium spices.

Salt – Sea salt or Himalayan

How to Make Leftover Quinoa Pudding

In a medium saucepan, start by whisking together the milk, egg, maple syrup, vanilla, spices, and salt.

Then stir in the quinoa.

Place the saucepan on the stove, and on medium-high heat, bring to a simmer, stirring occasionally. Reduce to medium-low heat and cook for 20-25 minutes or until the pudding reaches your desired thickness. As it’s cooking, make sure to stir it occasionally to prevent the milk from burning.

Ingredients

  • 2 cups cooked quinoa
  • 1 1/2 cups milk
  • 1 egg
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/4 teaspoon salt

Instructions

  1. In a medium saucepan, whisk together all of the ingredients except the quinoa.
  2. Stir in the quinoa.
  3. On medium-high heat, bring the mixture to a simmer, stirring occasionally.
  4. Turn down to medium-low heat and cook for 20-25 minutes or until the pudding reaches your desired consistancy. Stir occasionally to keep the milk from burning.
  5. Enjoy warm with any toppings of your choice.

Notes

For dairy free quinoa pudding, use full-fat coconut milk instead of regular milk.
