As a busy mom, I’m always looking for quick and healthy snacks. While I love taking time to bake something special like homemade fig bars, sometimes I need recipe I can just throw together.
That’s why I love these energy balls with dates! They’re the ultimate quick snack that your whole family will love.
If I get busy and don’t make them for a few weeks, my husband will request them. Once my toddler knows we have them, the only thing she wants to eat all day long is “date balls.”

How to Store Energy Balls with Dates
To store, place the energy balls in an airtight container in the fridge for up to two weeks. If the container isn’t airtight, they can easily pick up other flavors from the fridge.
Can I Freeze Energy Balls with Dates?
Yes, energy balls are a fantastic snack to make in advance and freeze! Simply place them in an airtight container or ziplock freezer bag and store in the freezer for up to 3 months.
When you’re ready to thaw them, move them to the fridge. Also, some people (like my husband) prefer eating them straight out of the freezer.
Prep in Advance
Since energy balls with dates freeze so well, they’re the perfect make-ahead snack! If I know I have a busy schedule or postpartum season coming up, I’ll make a few batches to store in the freezer for later.
The trick is not letting any of my family know or they’ll eat them all within a week!

FAQs
Can I use dried dates? – While dried dates will work okay in this recipe, I don’t recommend it. The energy balls will be drier and less flavorful.
Can I turn these into protein balls? – Yes, if you want to add a little extra protein to these energy balls, add a small amount of protein powder.
Why are my energy balls so oily? – If you let the food processor run too long, the walnuts will release too much oil and make the balls oily. If this happens, simply place the mixture in the fridge for 15 minutes to firm up before rolling them.

Ingredients for Energy Balls with Dates
Fresh dates – I used Deglet Noor dates in this recipe, but Medjool dates would also be delicious! If you use Medjool dates, you can reduce the number of dates by 50% since they’re so much bigger.
Walnuts – This recipe calls for walnuts, but feel free to substitute any other type of nuts instead.
Shredded Coconut – Make sure to use unsweetened shredded coconut. The dates add all the sweetness this recipe needs.
Chia seeds – If you prefer, you can substitute flax seeds.
Vanilla extract
Salt – Himalayan or sea salt
How to Make Energy Balls with Dates

Step 1: First, place the dates, nuts, chia seeds, salt, and vanilla in your food processor.

Step 2: Blend until it comes together as a soft dough. If you let it run too long, it may get too soft and oily to easily form into balls.
In this case, just put it in the fridge for 10 or 15 minutes to firm up again before moving on.

Step 3: Form the dough into small approximately 1 1/2 inch balls and roll in shredded coconut.

Step 4: Then put them side-by-side on a dish or baking sheet, cover, and place them in the fridge to chill for an hour.

Energy Balls with Dates

Ingredients
- 45 medium-size fresh dates
- 2 cups walnut halves and pieces
- 1/4 cup chia seeds
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 3/4 cup shredded coconut
Instructions
- Place the dates, nuts, chia seeds, salt, and vanilla in your food processor and blend until it comes together as a soft dough.
- Form the dough into small approximately 1 1/2 inch balls.
- Roll them in the shredded coconut.
- Place them on a tray and refrigerate for an hour.
- After an hour, put them in an airtight container or freezer bags and store in the fridge or freezer.
