  • 45 medium-size fresh dates
  • 2 1/2 cups walnut halves
  • 1/4 cup chia seeds
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3/4 cup shredded coconut

Instructions

  • Place the dates, nuts, chia seeds, salt, and vanilla in your food processor and blend until it comes together as a soft, smooth dough.

  • Form the dough into small, approximately 1 1/2 inch balls and roll in the shredded coconut.
    3/4 cup shredded coconut
  • Chill in the fridge for one hour and then enjoy!

Notes

If you blend the mixture too long, it may get very oily and become difficult to work with. In this case, just put it in the fridge for 10 or 15 minutes to firm up again before rolling into balls.
