Healthy Never Tasted So Good
One of my favorite things to do is take a recipe and make it healthier and more delicious at the same time. It’s not always possible to do both at once, but this baked oatmeal is one of those times where taste and nourishment come together perfectly.
It’s made with extra eggs (compared to traditional baked oatmeal), chia seeds, and peanut butter for added protein and no refined sugar!
I also love how easy it is to make in advance, and I’ll often make it for my husband to reheat in the mornings before he goes to work. After struggling with Crohn’s, breakfasts can be tricky for him, and this has become his favorite way to start the day with plenty of energy.

Step-By-Step Instructions

Step 1: First, preheat your oven to 350 and grease the bottom and sides of a 9″x13″ baking dish.
In a large mixing bowl, whisk together the oats, baking powder, and chia seeds, and then stir in the milk, eggs, peanut butter, maple syrup, and vanilla.

Step 2: Pour the mixture into your baking dish, and bake for 30-35 minutes or until it’s set and the edges are just beginning to turn golden brown. Enjoy!
