Ingredients

  • Rolled oats – Not quick oats. I love using sprouted oats, but regular rolled oats are good too.
  • Peanut butter – I used natural, unsweetened peanut butter.
  • Milk – Dairy or non-dairy. In this recipe, coconut milk is my favorite dairy alternative, however, any other milk would work as well.
  • Eggs
  • Maple syrup – Honey would work too, however, it’s best to avoid heating honey which is why I opted for syrup when creating this recipe.
  • Chia seeds – Optional. You could also swap for flax seeds if you prefer.

Egg-Free Option

You can leave out the eggs and use one very ripe mashed banana instead.

Step-By-Step Instructions

Step 1: First, preheat your oven to 350 and grease the bottom and sides of a 9″x13″ baking dish.

In a large mixing bowl, whisk together the oats, baking powder, and chia seeds, and then stir in the milk, eggs, peanut butter, maple syrup, and vanilla.

Step 2: Pour the mixture into your baking dish, and bake for 30-35 minutes or until it’s set and the edges are just beginning to turn golden brown. Enjoy!

Tips for Success

Stir until just combined – Over-mixing can create a gummy texture.

Adjust baking time – If you prefer a soft, custard-like texture, bake for 25-30 minutes, but if you want to slice it like a cake, bake 35-40 minutes.

I don’t recommend mixing the batter long before baking as the oats will soak up more of the liquid and create a denser, more custardy texture.

Yes, baked oats are full of fiber and various other nutrients making them a fantastic healthy breakfast. This recipe also includes other nutrient-dense ingredients such as eggs and chia seeds to create a filling, well-rounded dish.

What does adding eggs do to baked oatmeal?

In addition to increasing nutrition, eggs improve the rise and help bind the oatmeal together to create a soft, cake-like texture.

If you use a banana instead of eggs, it will help bind the oatmeal together, but the dish will have less rise and a denser texture.

  • 3 cups rolled oats
  • 2 cups milk dairy or non-dairy
  • 4 eggs
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla

  • You can adjust the baking time to your preference. If you prefer a soft, custard-like texture, bake for 25-30 minutes, but if you want to slice it like a cake, bake 35-40 minutes.
  • For egg-free baked oatmeal, replace all four eggs with one very ripe mashed banana.
