Peanut Butter Baked Oatmeal

Ingredients

  • 3 cups rolled oats
  • 2 cups milk dairy or non-dairy
  • 4 eggs
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder

Instructions

  • Preheat oven to 350 and grease a 9"x13" baking dish.
  • In a large bowl, whisk together the oats, baking powder, and chia seeds.

  • Stir in the milk, eggs, peanut butter, maple syrup, and vanilla.
    2 cups milk, 4 eggs, 1/2 cup peanut butter, 1/3 cup maple syrup, 1 teaspoon vanilla
  • Pour into the baking dish and bake for 30-35 minutes. Enjoy!

Notes

  • You can adjust the baking time to your preference. If you prefer a soft, custard-like texture, bake for 25-30 minutes, but if you want to slice it like a cake, bake 35-40 minutes.
  • For egg-free baked oatmeal, replace all four eggs with one very ripe mashed banana.
