  • Frozen vegetables – Do not thaw! I recommend using a California or Normandy blend. While this roasting method works with any type of frozen vegetable, blends with smaller vegetables cook more quickly and can burn, so you may need to adjust the roasting time.
  • Olive oil
  • Balsamic vinegar – Not balsamic glaze. This adds a rich, sweet and tangy finish to the vegetables.

Testing Note: I tested this with a standard stainless steel baking sheet and it works well. However, when I make this for my family, I prefer using my cast iron baking sheet since it gives the vegetables an even crispier finish.

If you use a cast iron sheet, make sure to remove the vegetables promptly as the cast iron holds heat and will continue to cook them once they’re out of the oven.

Step-By-Step Instructions

Step 1: First, place the baking sheet in the oven and preheat it to 425 degrees.

Once the oven is preheated, remove the hot baking sheet and evenly place the vegetables on it without allowing them to overlap or touch very much.

Bake for 18-20 minutes or until the edges are starting to get crispy.

Step 2: Then, remove the vegetables from the oven, drizzle with oil, balsamic vinegar, salt, and pepper and toss to combine.

When you’re done tossing, make sure they’re still spread across the pan evenly without overlapping!

Step 3: Bake them for an additional 7-8 minutes and serve warm.

Tips for Crispy Roasted Frozen Vegetables

Preheat your pan – Placing the pan in the oven while it’s preheating helps the vegetables start cooking immediately and helps prevent them from getting soggy.

Don’t crowd the vegetables – To prevent the vegetables from steaming, there should be a little bit of space between each vegetable, and they should never overlap. If necessary, use two pans instead of one.

Add the toppings when they’re mostly cooked – Adding any more moisture or even salt to them at the beginning can make them soggy.

Can I make these vegetables ahead of time?

These vegetables have the best flavor and texture immediately after roasting, however, they can work well for meal prep. Leftover roasted frozen vegetables are especially good in bowl recipes where they’re mixed with other ingredients.

Can you roast frozen vegetables without thawing them?

Yes, this recipe will only work if you use frozen, unthawed vegetables. Thawing the frozen vegetables first would actually make them mushier.

Can I use fresh vegetables instead of frozen?

This recipe is designed for frozen vegetables, and, for best results, fresh vegetables would require different cooking times and another method such as these roasted Brussels sprouts and butternut squash.

Why aren’t my roasted frozen vegetables crispy?

Frozen vegetables are prone to getting mushy, so make sure to follow this recipe carefully. Soggy vegetables are typically due to overcrowding the pan, adding the salt, oil, and flavorings too early, or not preheating the pan.
