One of my favorite things about summertime is all the fruit recipes. I look forward all year to making things like gluten-free blueberry crisp, banana and blackberry muffins, and strawberry Dutch baby with fresh ingredients.

Ever since I can remember, watermelon has been my favorite fruit. I used to always eat it plain, but a few years ago my husband convinced me to try lime juice on it.

That combination couldn’t have been better! When I decided to make watermelon juice, I knew lime had to be the “secret” ingredient, and it adds just the perfect touch to this refreshing drink.

Why You’ll Love this Recipe

Quick & easy – Just add everything to a glass and blend!

Packed with electrolytes – Watermelon and coconut water are both full of fantastic electrolytes and this is the perfect hydrating drink for hot summer days.

No added sweeteners – The watermelon and coconut water add the perfect amount of sweetness so no additional sugar is necessary.

Kid and adult-friendly – The whole family will love this refreshing treat!

Tips for Success

Use a seedless watermelon – You don’t want all the seeds in your drink and picking them out can be time consuming.

Use cold ingredients – It’ll make it so much more delicious and refreshing!

Don’t move the immersion blender too much – Just hold in the glass and blend. If you move it much you risk making a big sticky mess (ask me how I know).

Ingredients

  • Watermelon – Cubed and chilled. When you’re selecting a watermelon, choose one that’s dull in color, heavy for its size, firm, and has a yellowish-white spot. It should also sound hollow when thumped.
  • Coconut water – To give the watermelon juice a smoother texture and add additional flavor.
  • Lime – Juiced. While fresh lime juice has the best flavor and nutrition, you can substitute bottled lime juice instead.
