Ingredients

  • 6 cups pecan halves
  • 1 cup coconut sugar
  • 1/3 cup water
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/8 teaspoon salt

Instructions

  • In a saucepan, stir together the coconut sugar, spices, vanilla, salt, and water over medium heat.
    1 cup coconut sugar, 1/3 cup water, 1 1/2 teaspoons vanilla extract, 1 1/2 teaspoons cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon cloves, 1/8 teaspoon salt
  • When the mixture begins to bubble, stir in the pecans.
    6 cups pecan halves
  • Continue to stir the mixture frequently until the pecans have been coated with all of the sugar mixture and there is none left at the bottom of the pan.
  • Spread out the pecans on parchment paper and let them cool completely before breaking apart.

Notes

  • You can substitute brown or white sugar for the coconut sugar.
  • Egg-free candied pecans can be stored in an airtight container at room temperature for 3 weeks or in the freezer for up to 3 months.
