Preheat your oven to 350 degrees and grease a bread pan.
In a medium bowl, whisk together oat flour, baking soda, cinnamon, and salt.
In a large bowl, mash the bananas using a potato masher or fork.
Add avocado oil, eggs, sugar, and vanilla to the mashed bananas and whisk until everything is well combined.
Stir the dry ingredients into the wet ingredients.
Fold in the walnuts.
Pour the batter into the bread pan
Bake for 40-45 minutes, until you can insert a toothpick and it comes out mostly clean with a few moist crumbs.
Let the bread cool for 10 minutes before removing it from the pan, and then let it finish cooling before slicing.
