Preheat your oven to 350 degrees.
Grease a 9"x13" glass baking dish.
Place the apples, tapioca starch, spices, and vanilla in the pan and stir to combine.
3 pounds apples, 1 1/2 tablespoons tapioca starch, 3 teaspoons cinnamon, 1 1/2 teaspoons vanilla extract, 3/4 teaspoon cloves, 3/4 teaspoon nutmeg
In a large mixing bowl, stir together the oats, oat flour, almond flour, coconut sugar, maple syrup, coconut oil, and salt.
2 1/2 cups rolled oats, 1 1/4 cup oat flour, 1 1/4 cup almond flour, 2/3 cup coconut oil, 1/2 cup coconut sugar, 1/2 cup maple syrup, 1/4 teaspoon salt
Spread the mixture evenly across the top of the apples.
Bake for 40-45 minutes or until the apples are bubbling and the top is just beginning to turn golden brown.
Let rest for 5-10 minutes and then enjoy!
