  • 4 large chicken breasts sliced into 1-inch strips
  • 2/3 cup yellow mustard
  • 2/3 cup honey
  • 1/2 cup milk
  • 1/2 onion diced
  • 5 tablespoons water
  • 3 tablespoons tapioca starch
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 tablespoon salt
  • 2 teaspoons paprika
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon pepper
  • fresh parsley optional

Instructions

  • In a slow-cooker, stir together the mustard, onion, garlic, olive oil, apple cider vinegar, salt, pepper, and paprika. Then stir in the chicken.
    2/3 cup yellow mustard, 1/2 onion, 2 tablespoons olive oil, 2 cloves garlic, 1 tablespoon salt, 2 teaspoons paprika , 1 teaspoon apple cider vinegar, 1/2 teaspoon pepper, 4 large chicken breasts
  • Cook on low for 4-6 hours or until the chicken is fully cooked and tender.
  • Make a slurry by whisking together tapioca starch and water.
    5 tablespoons water, 3 tablespoons tapioca starch
  • Add the slurry, milk and honey to the slow cooker and stir it in.
    2/3 cup honey, 1/2 cup milk
  • Using two forks, shred the chicken in the slow cooker, and cook for an additional 30 minutes. Serve over rice and garnish with fresh parsley (optional).

Notes

  • For a stronger, spicier flavor, feel free to substitute up to half the mustard for dijon mustard.
  • If you're in a hurry, you can cook the chicken for 2 - 2 1/2 hours on high, but it won't be as tender.

How to know when it's done

  • The chicken shreds easily with a fork.
  • The center is completely opaque and there's no pink.
  • The juices run clear.
