Preheat your oven to 350 degrees
In a large mixing bowl, mash the bananas with a fork or potato masher.
Add the rest of the ingredients: chopped dates, oats, avocado oil, vanilla extract, salt, and walnuts (if you are using them).
Stir until the ingredients are mixed thoroughly.
Scoop heaping tablespoons onto greased cookie sheets making sure the cookies don't touch.
Bake for 20 minutes or until the tops are slightly golden.
Let cool and store in the fridge for up to 5 days. Enjoy!
