fresh spearmint leaves

Instructions
In a saucepan, bring the water to a boil over high heat.

Remove from the heat and stir in the spearmint leaves.
2 cups fresh spearmint leaves
Cover the pot and allow the tea to steep for 15-20 minutes.
Pour the tea through a mesh strainer to remove the leaves.
Allow the tea to cool to a drinkable temperature and stir in the honey.
1/4 cup honey
Chill and serve the spearmint tea over ice.
Notes
Spearmint tends to be a little milder in flavor than other types of mint, so it's especially important to use the full amount this recipe calls for.
To avoid weak or bitter tea, make sure to steep for 15-20 minutes.
Feel free to increase or decrease the amount of honey to taste, and add it only after the tea has partially cooled.
To avoid watering down the tea, add the ice immediately before serving.
This tea is also delicious served hot.
