Ingredients

  • 2 pounds chicken breasts cut into 1/2" strips
  • 1/2 cup coconut oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 15- ounce can tomato sauce
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1/2 tablespoon turmeric
  • 1 1/2 tablespoons cumin
  • 1/2 teaspoon pepper
  • 1/2 tablespoon salt
  • 1 cup cream regular or coconut cream

Instructions

  • Place the tomato sauce, coconut oil, diced onion, minced garlic, spices, and salt in the slow cooker and stir to combine.
  • Add the sliced chicken and stir until it's coated.
  • Turn the slow cooker on low heat and cook for 3-4 hours or until the chicken is fully cooked.
  • Stir in the cream and cook for an additional 15 minutes.
  • Serve with naan over rice, quinoa, or cauliflower rice and top with fresh cilantro.

Notes

To make this recipe dairy free, use coconut cream instead of regular cream.
