Meatloaf without Eggs

Ingredients

  • 2 pounds ground beef
  • 1 1/2 tablespoons tomato paste
  • 1/4 cup oat flour
  • 1 onion
  • 4 garlic cloves minced
  • 2 tablespoons + 1/2 teaspoon sage divided
  • 1 1/2 tablespoons + 1/2 teaspoon oregano divided
  • 1 tablespoon + 1/2 teaspoon basil divided
  • 1/2 tablespoon salt
  • 1/4 teaspoon pepper
  • 30 ounces tomato sauce
  • 1/3 cup apple cider vinegar
  • 1 tablespoon coconut aminos
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  • Preheat your oven to 325 degrees.
  • Grease 2 glass bread pans.
  • Peel and grate the onion using a cheese grater or chop it in a handy chopper until it almost turns to puree.
  • Place the onion in a small bowl with the oat flour and stir so that the oats can absorb some of the juice. Set aside.
  • In a medium bowl, stir together the tomato sauce, apple cider vinegar, coconut aminos, 1/2 teaspoon of oregano, sage, and basil, and garlic and onion powders.
  • In a large bowl, combine the meat, onion and oat mixture, tomato paste, minced garlic, the rest of the herbs and spices, and salt. Stir together using your hands, being careful not to over mix.
  • Form the meatloaf into 2 loaves and place in the bread pans.
  • Pour the sauce evenly over the meatloaf.
  • Bake for 60 - 75 minutes or until it's cooked through.
  • Enjoy immediately with your favorite sides!

Notes

Substitutions:
  • You can substitute ketchup for the tomato paste.
  • You can substitute Worcestershire sauce for the coconut aminos.
