Ingredients

  • 4 apples
  • 2 tablespoons lemon juice juice from one lemon
  • 1.5 tablespoons coconut oil
  • 1 teaspoon molasses
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • Optional: chopped nuts and/or dried cranberries

Instructions

  • Peel and slice the apples into thin 1/4 - 1/2 inch slices.
  • Place the coconut oil in the skillet and melt it on medium heat.
  • Add the apple slices to the skillet.
  • Stir in the lemon juice, molasses, vanilla, and spices.
  • Cook the apples on medium - medium low heat until they're soft, usually about 15 minutes. As the apples are cooking, stir frequently to keep them from burning.
  • Serve them immediately as a delicious side! If you would like, you can top them with chopped nuts and dried cranberries to make this an extra special dish.
