Peel and slice the apples into thin 1/4 - 1/2 inch slices.
Place the coconut oil in the skillet and melt it on medium heat.
Add the apple slices to the skillet.
Stir in the lemon juice, molasses, vanilla, and spices.
Cook the apples on medium - medium low heat until they're soft, usually about 15 minutes. As the apples are cooking, stir frequently to keep them from burning.
Serve them immediately as a delicious side! If you would like, you can top them with chopped nuts and dried cranberries to make this an extra special dish.
